Refreshing Iced Matcha Latte Recipe

Have you ever tried a dairy-free matcha latte? Better yet, an iced matcha latte? Get ready for your new favorite refreshing pick me up this summer. Here is an easy recipe that that you can whip up in a minute.

If you haven’t heard why matcha is a better form of caffeine than coffee, google it up! Something about more sustained and calming energy as opposed to coffee’s pick you up and drop you down. Also according to the internet, it has tons of antioxidants, boosts metabolism, detoxifies naturally, is rich in fiber, chlorophyll and vitamins, and aids in concentration.

Here’s my Refreshing Iced Matcha Latte Recipe:

1 c oat/coconut milk
1/2 cup ice
2 tsp matcha powder
1 tbsp maple syrup
dash of cinnamon

Blend and pour over ice!

Easy Paleo Banana Blueberry Muffins

I’ve been making these muffins for Roger’s breakfast for about a month now and thought someone else might benefit from this recipe as well. It’s so yummy and healthy! Gluten free, dairy free, and sweetened only with bananas. Perfect for babies and actually anybody now that I think about it.

1 C oat flour (or any mixture of gluten free flour) 
1/4 C melted coconut oil 
2 eggs
2 large ripe banans or 1.25 cups of boiled sweet potatoes
1 tsp baking soda

Optional: lil cinnamon & lil vanilla for a lil extra flavor 
Optional: 1 tbps ground nuts or seeds for extra health - (flax, pumpkin, pecans) 
Optional: 1/2 cup blueberries or strawberries or even 1/4 cup broccoli or spinach mixed. Health!

350 for 13-15 min.
